Kellerhaus is a must multiple times a year (by car, or course!) both because of the make your own sundae and the long standing tradition. Pier 19 for close to Moultonborough, Bailey's Bubble in Wolfeboro, Stillwell's in Alton Bay (I HAD been there, but was confused in the above comment), Liliuokalani's in Paugus Bay, Town Docks in Meredith, Dewey's in Center Harbor.
