The practice of rendering maple sap into maple syrup or maple sugar is really a late winter activity more than a spring practice, but it does tend to make one think Spring. The early settlers are said to have learned this practice from the native Indians of the area. This saphouse, with copious amounts of steam rising from its evaporation pans, is owned by the Vappi family of Moultonboro and is located on Rte 171.

This picture underscores just how brutal the winter of 2008 has been. Today, March 30 2008, there is a couple of feet of snow on the ground in the lakes region. However, two years ago to the day, there isn't a trace of snow.
