The practice of rendering maple sap into maple syrup or maple sugar is really a late winter activity more than a spring practice, but it does tend to make one think Spring. The early settlers are said to have learned this practice from the native Indians of the area. This saphouse, with copious amounts of steam rising from its evaporation pans, is owned by the Vappi family of Moultonboro and is located on Rte 171.
