Default Got Tripe

Pickled tripe is not everyones favorite food,but several regulars have asked for it and we finally got some in.
I'm saving a piece for tis.

Default Tripe

I haven't had tripe in a hundred years. I tried it for the first time at Bill's Diner, which was a popular eating place in downtown Laconia back in the day. Always used to turn up my nose (with an accompanying "yuck"} at the mention of the name before that time. Once I tried it, I found to my surprise that I really liked it. It has to be fried to a crispy golden brown to be good, though, and Bill's knew how to prepare it to perfection.

Default pickled tripe

Back when I was in the food business, we used to get it in about a 6 gallon wooden barrel. Does it still come that way?

You guys are a lot braver than me.I'll pass on eating stomach.For wholesale it typically comes in a plastic 5 gallon bucket.

It looks awful like that, but when it is served with the batter, it doesn't look bad at all. And it is SOOO yummy!! My mouth has been watering all day. We are working on coming Thurs night with friends. My brother wants to come but he is sick from chemo so he might have to wait until next week. So I guess I will just have to suffer and come twice in a few days. Oh well----------

Phantom,we buy it in 10lb pails.....very hard to find.Comes from Bean and Sons from Bangor Maine.I believe they are they only people left in the country that are still making it.

Tis you are probably right but by the way generally they don't regularly have grilled haddock and was told they plan to start having fish tacos so I think I will stay away from the tripe

Tripe falls under a similar category for me as Red Flannel Hash and Salmon Pea Wiggle! At some point in your life (as a child), you had to eat it, but as an adult you know better.

You just don't know what you are missing! Phoenix, it is funny you mention fish because the waitress at the VK would tell you after you ordered the tripe that it is not fish. Apparently people that don't know must think it is fish from looking at the menu, is that right Sam? Vita, if you want to meet us there, I will gladly give you a taste of mine to try. You too, Jmen. IMO the tripe itself doesn't have a lot of flavor. It is the vinegar and the coating you really taste I think. Anyway, if you guys don't like it, it is more for us!

All this talk about tripe, haddock, salmon, and calamari is making me sick. I don't eat any of those things. I would eat turkey croquettes if the turkey was all white meat. I think you can sense that I am a picky eater. I will eat any vegetables along with white meat chicken, white meat turkey, pork, and beef. Oh- and of course I eat all pasta's and rice.

Google "tripe for sale" and see that most of the first page is tripe food for dogs!I used to buy thousands of pounds in my former meat manufacturing life.I'll leave it for the dogs thank you.More for you!

Any food product that has to be thoroughly scrubbed, scalded with hot water, and soaked in a peroxide/acid liquid to turn it white from the naturally greyish color of "washed" or Grey" tripe, isn't something that I would want to eat.

You know if you think about what is in hotdogs would you ever really eat one? Much of our meat I wouldn't eat if I thought about what is in it or how it is prepared for us.

It looks just like a slab of haddock when it is served to you one the plate, Rusty. I will try to remember to take a pic tonight when I go.

My Wife and her sister and I love fried Tripe and had it as children growing up, I personally liked mine rinsed off and raw.
Anyway my question is, we have always had it fried which is out of this world. But some Italian friends of ours say that they have only had it in a sauce over pasta(like your photo), now when it is fried you can taste the vinegar flavor from it being pickled, but our friends say they cannot taste the vinegar when served in a sauce. Do you find this to be true?

I can't remember ever seeing pickled tripe growing up. Tripe was always bought fresh and then cleaned, boiled for some time before a long braise in garlic and olive oil then added to the sauce to simmer with the rest of the meats. It's not eaten as much because, like all organs, it's loaded with cholesterol and it takes a bit of work and time to prepare.

Riverat, take the trip up to the VK then to have some. IT is so good. I would like to have it again tonight! The waitress who was great by the way, told us that she had a lot of people asking for it this spring.

Way off base here tis. I purchased and formulated hot dogs for my family business for 10 years. There is NO offal(any by product not being skeletal muscle) products unless it is listed in the ingredients. A typical formula consisted of 90% lean bull meat, 50% lean pork trim and 95% lean veal to finish with a 28% fat content. That's what you will find in a quality frank. If there is soy, lips, hearts, tongues, or heaven forbid tripe it would have to be shown.

All I got to say is, if you haven't tried it, don't knock it. My wife had never had oysters on the half shell until she was at the Woodshed many years ago. She broke the women's and men's record by consuming 101. She still loves them today.

Right on tis! There is nothing better than fresh oysters on the half shell. Problem is finding them around here. Portsmouth is about the closest place I have found to get them real fresh. But, Lemon Grass has some great fried oysters, so that will suffice.

Little Bear - I feel sacrilegious for saying this, but have you checked out The Weathervane's raw bar? They used to have oysters there - maybe the one at the Weirs will have them? Just a thought....

Never tried Weathervane. My concern is that there isn't enough turnover of raw oysters in this geographical area. I'd rather wait and get some that I know are super fresh. My favorite place is the Union Oyster House in Boston. 2nd to none!

I thinkwe're in luck.tis.
It comes from Bangor,Maine (6-7 hour round trip) but I found someone to ship it for us so we should have it all the time.
