Default Killing Power to gas water heater?

Since I'll be gone from house during winter for several months, I'm going to kill electric power to gas water heater at the fuse panel.

There is also a 110AC connection from the gas water tank, which plugs into AC Outlet,
which I suspect creates spark to the 'Pilot' light on the heater, but guessing here, I plan to unplug this for the winter.

Can folks provide thoughts about this 110AC connection, and if it might be for 'pilot' light ?

Last, should I shut off the gas to the heater, as it does have a shut-off ball valve.

Thoughts about all ?
