Could the Scion have leaking valve seals?

Have you priced a solution for the oil consumption?

Buying a car that is rather long in the tooth can be a Pandora's box of worse horrors than what you have now.

My understanding is that in 2014 Subaru made changes to increase the longevity of their head gaskets.

As explained to me, the actual gasket material is improved but...

As has been stated (opined?) on this forum, leaving old motor oil in the engine can be detrimental to the gaskets.

If I had a 2015 Forester with 95k of MY miles with MY known maintenance, I wouldn't hesitate to continue on to 250k miles.

Two of my kids currently drive their '14 and '17 Foresters with 175k and 100k miles on them.

Both cars started with me and were transferred to them around 55k so there is no uncertainty about early maintenance.
