I know it has nothing to do with the NH lakes region but the best prime rid that I ever had was at the restaurant at Point Sebago many years ago. I remember they brought out the whole rib and cut yours off in front of you. Then the chef dunked it in 3 different pans of juices before putting it on your plate. I still have dreams about that prime rib!
I've never had one that matched that since and at 64 I've had a lot of prime ribs.
