Rather than try to find a boat you can cover more easily, you could just get a boat that does not need a cover.

A welded aluminum boat with a self-bailing and carpetless cockpit; and an enclosed helm, could be left uncovered all the time with no worries about sun or water damage. Look at PNW boats like Duckworth. Eastern boats would be similar if you prefer fiberglass.

Alternatively, a white, commercial-built (meaning rugged but not fancy), fiberglass center-console, with a T-top and no upholstery would work well too. White gel coat will look good after years in the sun and the T-top will keep the sun off the helm area.
