Follow up: I finally went to a one-mechanic garage where the mechanic didn't insist on driving my car. He put a plastic cover on the steering wheel and shifter, a sign that he was thinking about safety. Of course, there are a lot of other surfaces that he may have touched, so I sanitized things like the door handle. He left the windows open afterward. I was very satisfied with the service because I knew who was going to be inspecting my car and could discuss my concerns with that person, as opposed to a larger garage where you can't do that.
