Mehan tests the fat content before he buys it at the docks.As he explains,swordfish that are migrating are thinner and yield a very dry filet so he only buys whole fish that have been feeding and have been fattened up.
Most of the big chains buy from the lowest bidder and you don't get the best quality.Most restaurants get the best seafood and as far as retail goes......the two best places I know of are Capt'n Barts and EM Heath's

Went to EM Heath on your suggestion. All I found was pre-packaged (styrofoam tray - cellophane wrapped), pre-weighed servings. No whole fish or custom cut fish. Did I miss something? This was in a section at the rear of the store. I am used to seeing the fish whole, checking the eyes, skin, flesh firmness.
