I'm assuming that it's going to be seasonal and since you have another operation and won't be there all the time, you'll want to keep it fairly simple.
Considering that you have outside seating facing the lake..............I would do a clambake. Pretty hard to screw up steamed lobster and clams. You could also have a few other seafood items such as garlic crab (a Ft Lauderdale place I know serves them on newspaper and people love it) mussles and some real good bread. Maybe one chicken item for the non seafood people.
You won't need a pricey chef or a big payroll.......everybody loves to get down and dirty on vacation. Picnic tables and paper plates and no dishes to wash.
