I wanted to know if I can digest this fish. And is it really a rock bass?

Judging by the red eyes and the way its mouth seems to be... on the hook it is hard to tell.... I would say this is certainly a rock bass.
They are edible.
These are an invasive species that are not natural to Lake Winni. If you catch them, the consensus is to at least kill them rather than release them
From the NH Fish and Game web site
Conservation/Management: Rock bass are considered an invasive species that, once introduced,is capable of altering the food web in lake and pond ecosystems.
