Perhaps it is their way of "Soft Opening" .... albeit a month is a long time for a soft opening. It allows staff (particularly kitchen) to get their act together before the scrutiny and reviews begin.

Just a thought.

I too was in Wolfeboro last weekend and looking for indications of what stage it was in -- saw nothing, presumed nothing yet had occurred.
