Thought I would start a new thread to let everyone know the Meredith store is open.
The store is Beautiful and they have everything the Gilford store has and more:

The Wine'ing Butcher, as well as Hannaford's will both be welcome additions for us during our July vacation in Meredith. Precious "lakefront time" will be saved not having to travel to Laconia and Gilford.

I've been eagerly awaiting this. The Gilford store is great but majorly out of our way. The Meredith store is right along our normal route and even worth a boat ride over and a bit of a walk. Can't wait to check it out.

Stopped by Friday night to say welcome to Andrew and Gretchen... store is great... can't wait to try the pizza. I recommend all their marinated meats, they are wonderful. On Friday, as a treat, I bought 4 of the colossal shrimp (pretty pricy) but they were yummy.

Ok...sorry to say that I have never heard of them....only been coming to the lake for 43 years...clearly...don't get out much. Let me tell you....can't wait to visit. It sounds like I will NOT be dissapointed!:D
Their meats sound good but not too diffiult to do yourself. I buy (quality) cuts throw them in a ziplock bag with my desired flavor of marinade, usually for at least 24 hrs and bingo....Awesome meal. :D I'm really interested in their pizza, nobody has seemed to try it yet.

At the foot of the high school hill which is Rt the 25. Just past Citizens bank on the right. The WB is behind the gas station in a seperate building.

Yeah just to not confuse people it has become a blue canoe station maybe within like a year or something.

FYI...Their marinated tips and chicken are done in a vacuum tumbler. You load the chamber with meat and marinade, vacuum pump ALL the air from the chamber (makes the meat expand and opens the grain) then the meat tumbles for 15 minutes in the flavored marinade. :cheers:
Air is let back into the chamber, the meat is removed, the meat returns to it's normal size and...voila...you have meat with marinade throughout the entire piece, not just on the outside like anyone can do in a ziplock bag. :rolleye1:

Or you can use your own vacuum sealer at home, takes about 2 hours, but have yet to find a store bought marinade that even compares to ones I make at home for a lot less money. Granted I have been tweeking my recipe for a "few years". That is just my friends and family's opinions though, may not be to everyones liking.

2 adults and one diminutive 16yo just polished off 2.5 pounds of the smokehouse tips. I'm not sure if we should be proud or embarassed. Man, that is some good meat!
I have cannoli, molten cakes, and some chocolate creation for dessert from their really nice dessert selection. Yes, I will find a place to put it.:D
I am so glad they're close by now!

OK, so is there any relation. The Meat House opened a store in our town in Mass and it looks extremely like the Wine'ing Butcher in Meredith. Both have the meat case with the same marinated tips; both have the dispense yourself olive oil and both have the identical artichoke dip. The resemblance is uncanny. What's the scoop?

Franklin, MA. But I've heard that The Meat House is a chain with about 5 stores or so, originating in Portsmouth, NH. I believe there is a store in Concord, NH and another in Bedford, NH.

So I took delivery of this meat tumbler last week and had a chance to use it last night. I put two pounds of unmarinated tip meat in it and used my own marinade. All I can say is WOW this thing really works fantastic!! In fifteen minutes all meat was fully marinated right to the center. The meat had absorbed every bit of marinade while in the tumbler and nothing was left in it. I put it on the grill and it was simply fantastic. Tender as can be with wonderful taste!!
This thing is a keeper and will be coming to the island camp for the summer! I would highly recommend one to anyone who enjoys marinating their own meat.
Billy Mays (sp??) has nothing on me! :D

Just curious as I hear great things about them and wonder how the price compares to the “do it yourself” approach.

Although you can marinate by yourself ( obviously ), The Wine'ing butcher has steak tips that you just cannot do yourself,especially with bottled marinade. To everyone, I STRONGLY recommend their BBQ molasses tips....absolutely to die for!! Once a month we get them as a treat for ourselves as they are a bit pricey but well worth the cost ;)

I didn't know they had desserts! Someone mentioned cannolli? Is it real ricotta filling or is it a pudding/cream cheese filling? :eek2: I hate it when I order a cannolli somewhere and I get a shell filled with sweet cream cheese, pudding, one time even whipped cream! Yeck.
As far as the meat expanding being fictional that is what happens :rolleye1: No it doesn't blow up double it's size but a process does happen similar to expansion that is more like like tenderization. Allowing the meat to fully take on flavors other then just have the flavors on the outside of the meat. These types of devices also tenderize the meat by letting the pieces hit the sides of the chamber and other pieces. Nice investment. This thread is making me hungry.

exactly, we had 4 hungry teenagers and two adults, ordered up 5 pounds of the steakhouse tips on Saturday and polished off the whole bag...DELICIOUS!!

Ok, so we were up this weekend and took the opportunity to give them a try.
Bought some of the Molasses style per Bear Island South recommendation as well as some of the Smoke House style.
I have to say that it was well worth the money as the tips were EXTREMELY tender and tasted great!

I think we got our first turkey tips from Johnson's Marketplace, next to Johnson's Dairy Bar (and restaurant) in New Durham. Just like the Wine'ing Butcher they have specialty meats and beers and fine food stuff that "Mee" understands. Anyway we now get as many turkey tips as we do steak tips when we shop there. Definitely worth a try from either place.

Got sandwiches at WB in Meredith today... I love that store, and Gretchen is such a dear. They are having wine tasting at 4:30 today (6/26). Anyway, got a Chicken Florentine and Cubano... best sandwiches we have ever had. Just awesome...probably not slimming, but still TERRIFIC

Donnamatrix- I have to try that sandwich. I usually (well 2X now) get meatball with prov, it is great and must weigh 2 lbs!
I love cooking big meals but it is usually a last minute decision on what and how many. The WB is perfect for people like me- one can easily get the makings for an entire, fantastic meal all in one shop.
I had heard good things here about the WB in Gilford but never bothered to stop there, what a mistake! They have a great operation- in my estimation a model for a retail establishment. They could take the Meredith store and put it virtually anywhere in the country and it would be a hit.

I finally stopped in to the Meredith location yesterday. I bought a crab cake, grilled veggies (asparagus, summer squash, and zucchini), and some steakhouse tips. We had a fabulous meal (it made all of this rain a bit more bearable!). We'll definitely be back! I have read other comments about the sandwiches and desserts and will try some of them on my next visit. Has anyone ever had their pizza? I'm dying to know what it's like.

I want to add my "thumbs up" comment to this welcome addition to the Meredith neighborhood! My husband and I frequent the place so often, we are on a first name basis with everyone who works there.
The service is excellent, the products are superior and their wine selection is top notch. Try their fresh baked breads and their made to order salads with a steak on the grill. Pick up some dessert while you're at it.
I've sent a lot of people to this place and they've all been impressed. Go!:liplick:

Just got a new toy, an Eastman Wild Game Marinator, AKA, Revio Marivac Food Tumbler. Tried it out tonight and it IS a keeper! It is a vacuum tumbler marinator, and it works great!
It has a solid base unit with the vacuum pump, timer and rollers, and a heavy duty plastic drum that will hold 5 pounds of meat and marinade. You put the meat and marinade in the drum, put the top on, and hook up the on board vacuum pump, push a button, and it pumps out the air. Stops automatically when it is done. You put the drum on the rollers and set the timer for 5-20 minutes. It runs very quietly, and works as advertised! It's easy to clean by hand, and, except for the rubber vacuum seal, it can go in the dishwasher. The vacuum line has an easily cleaned moisture separator to protect the pump.
We tried it tonight with a couple of London Broils from Heath Market at $1.99 a pound and a dollar's worth of Hannaford Inspirations marinade. The steaks were perfectly marinated in the specified 20 minutes, very, very flavorful and very tender, cutting easily with table knives instead of steak knives. A very nice $5 meal for two with leftovers for tomorrow's lunch!
It retails for about $220 plus shipping on Amazon and other online stores, but I found ours new on Ebay under the Revio name for just under $150 with shipping. WalMart Online advertises it under the Eastman name at $137 with free shipping to a local store, but strung me along for two weeks with phony tracking messages, then claimed it fell off the truck somewhere between Raymond and Gilford and canceled my order and told me to try again. Went to reorder it and it was no longer available, so I went to Ebay and had it in 4 days!
Anyway, definitely worth the money! Going to try it on chicken tomorrow night!

I have used many of them in my Mari-Vac tumbler and love them!
A little hint for you when doing chicken. The smaller the pieces the better and thick marinades do not work well on chicken. Use lighter consistency marinades and tumble for 20 minutes.

Kasey - if you read up earlier in the thread there was discussion of the method that WB uses to marinade their meats to make them so yummy....
Welcome to the forum - we can go off on some tangents here at times, but it's all good and usually harmless.... (unless we're planning gatherings around tikki bowls and such...) :coolsm:

The Wine'ing Butcher is an exceptional add to Meredith and I hope everyone headed through Meredith to other parts of the lakes region make it a point to stock up on the absolute BEST marinated meats on the planet! My favorite are the Steakhouse Tips, what a treat. And beyond the meats, it really is a wonderful Gourmet Market featuring all kinds of really great products. Make it a point to stop by!

Are Gretchen and Andy working full time at the Meredith store? We sure could use them back in Gilford (although perhaps they are in Gilford sometimes and our paths haven't crossed this year). The food is still great, but I've notice service slipping a bit. No one seems to know anything about cheese and I haven't had any great wine recommendations, either. I miss Gretchen.

We tried the tips twice during our stay. The Smokehouse were our favorites. Cut the tips with our fork - just the best!!!!!
Has anyone bought/tried the machine mentioned in this thread that the store supposed to use for marinating? Reviews please????

There should be a best pizza contest in the lakes region. The Wine'ing Butcher would win hands down. Imagine a pizza with steak tips. It is to die for. The Butcher's Blend Pizza is amazing! If you love pizza, you will love pizza from The Wine'ing Butcher!
